Ingredients

  • one tablespoon extra-virgin olive oil
  • 1 medium onion, chopped
  • 1 large green pepper, chopped
  • 1 jalapeño, seeded and finely chopped
  • 2 cloves garlic, minced
  • 1 one/4 lb. lean basis turkey (I use the vii% fatty)
  • 1/4 cup love apple paste
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons cumin
  • one teaspoon paprika
  • ane/two teaspoon salt
  • 1/iv teaspoon cayenne
  • 1 (fifteen oz.) can fire-roasted diced tomatoes, undrained
  • i (15 oz.) can black beans, rinsed and drained
  • 1 (xi oz.) tin can yellow or white corn, drained (encounter notes)
  • 2 cups depression-sodium craven goop (see notes)

Optional toppings:

  • Shredded cheese, sour cream or Greek yogurt, diced avocado, chopped fresh cilantro, hot sauce, crackers or fries, etc.

Instructions

  1. Set the Instant Pot to the sauté function and heat olive oil.
  2. Add the onion, green pepper and jalapeño to the pot and sauté for 5-7 minutes, until softened. Add the garlic and sauté for another 30 seconds.
  3. Add the ground turkey and cook, breaking up with a spatula or spoon, until browned and cooked through.
  4. Add the lycopersicon esculentum paste, chili powder, cumin, paprika, salt and cayenne and stir well to combine. Let cook for ane minute.
  5. Add the diced tomatoes, black beans, corn and craven broth and stir well to combine.
  6. Seal the Instant Pot and set to loftier force per unit area for 12 minutes.
